Chorizo and White Bean Stew

This is more of a fall/winter dish, but my husband LOVES chorizo and bought some as an addition to our CSA bag.  He found the recipe on Bon Appetit’s website and we made a few changes to incorporate some of our CSA vegetables we received this week.

The stew came out really good, and both my husband and mom raved about it and said it tasted like a restaurant dish.  The stew was spicy but not too spicy.  I think the stew would be great with hot Italian sausage (maybe even a turkey sausage to keep it healthy).

I am not going to repeat the recipe here, as it’s pretty straight forward.  I will say that I added two shallots and a bag of wax beans to the dish to use up our CSA veg.  And, I used a cornstarch slurry to thicken the sauce.
